I had to steal the pictures from Kari's blog. (thanks Kari, I forgot my camera that night) We spent a day with the whole McKinnon family and The Smith Family (minus Kari) The kids had so much fun playing together. I used to watch Derek when he was a baby when Kari and Steve had work. I couldn't believe how big he has gotten. He is 7 months older than Hailey. And it was great finally meeting Mr. Drew. He was such a doll. You'll have to come down more often. And Kari next time we will take all the kids to Disneyland. :)

Lucy and I decided yesterday to make homemade chocolate cupcakes and homemade frosting as well. I usually just buy the box kind and call it a day. But, I found a recipe that I waned to try and they were so yummy. Bryan and the girls loved them They were so moist.

Pork Chop and Mashed Potato Recipe

I've been looking through cooking blogs lately. I came across this one, and decided to try it out the other night. It was so yummy and definitely really easy. It's one of those recipes when you don't have really time to cook, but when its all done, it looks like you slaved in the kitchen all day long. So I decided to post it. Enjoy. :)

Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes

6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz can Cream of Chicken Soup

4 lbs peeled, cubed potatoes
5 Tablespoons real butter
1 Cup fresh grated Parmesan cheese
6 cloves roasted garli
1- 1 1/2 Cups warm skim milk (any milk will do, I just happened to use skim)
1 Tablespoon salt, or to taste
1 teaspoon fresh cracked black pepper, or to taste

1. Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.

2. Place potatoes into a large pot of cold water. Place onto stovetop over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consitency.

3. Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. Enjoy!

Recipe called for 6 pork chops, I only used 4 and I used the boneless pork chops. If you try it, let me know how it turned out.

♥ How long have you been together? almost 8 1/2 years.

♥ How long did you know each other before you started dating? well we went to high school together and he used to go dirt bike riding with my neighbor, but didn't talk until we started working together. So, when we started to become friends- maybe a month then.

♥ Who asked who out? He asked me if I wanted to go with him to the work Christmas party. We hit it off, so then he asked me out on a date 2 days later.

♥ Who does the cooking? He does. I do half the time. But, he's way better. He should of been a chef. Maybe one day he will be.. Hey I admitted it. :)

♥Who is the neat Freak? neither of us. Clean, yes, but no neat freak. It's hard with a 5 and 3 year old. You seem to clean one room, move on to the next and that first room you cleaned is already a disaster. Ughhh.
